Product Description

Clairin is Haiti’s traditional cane spirit, and this Vaval comes from Distillery Arawaks in the southern village of Cavaillon. It was built after the Second World War by Danois Vaval, and his son Fritz runs it today, growing 20 hectares of a sugar cane variety called Madame Meuze, without chemical fertilisers or pesticides.

We find the production the best part of the story. The cane is cut by machete, carried by mule and pressed in a small mill. Fermentation is wild, lasting around five days, with no added water or artificial substances. The pot still is one Fritz built himself, powered by steam from the engine of an old locomotive and fuelled by burning bagasse, the leftover cane fibre. There are two distillations a day, each lasting around 10 hours, and the spirit comes off the still at 45% to 55% ABV.

Because it’s made from cane juice, it sits closer to a rhum agricole than to a molasses rum.

Tasting notes

A fresh, balanced profile. The nose is heady and pulpy, with olive, brine, fresh papaya, mango and wet slate. The palate is smooth and flavourful, with green banana, anise, salt air, raw root vegetable and ripe plums. The finish is wide and gentle, with coastal air and beachy minerals.
