Cachaca
Cachaça is Brazil’s national spirit, distilled from fresh sugar cane juice. It’s legally defined in Brazil, with a strength of 38% to 48% ABV, and is not technically rum, although it’s a close cousin of rhum agricole. It comes unaged (white or prata) or aged in wood (gold), and it’s the essential ingredient of the Caipirinha.
